These are the resources I read to help my understanding:
1. http://catcentric.org/nutrition-and-food/raw-feeding/a-frankenprey-and-whole-prey-feeding-guide/
2. http://www.thecatsite.com/t/240809/raw-feeding-resource-thread
3. http://catinfo.org/
And this is how it happens in real life, for us:
1. Calculations (done once, living on a piece of paper in my handbag, and in my excel table). Then I write a shopping list of selected meats/organs/bones for that week.
2. Shopping at the Queen Vic Markets - we choose to feed Free Range. It is pricier, you don't have to, but Free Range has better nutrients in the meat.
3. Cutting and Packaging the Meals. I do a week at a time simply because we only have a fridge freezer. And as Kato doesn't really like to eat up his liver and organ portions, I divide up the amount needed for the week into a daily amount (it's small, so more manageable).
We feed 4xdaily: breakfast (canned food), then raw for lunch, dinner and supper. (An active cat eats a lot!).
5. Defrost. Before bed, put 3 meals in the fridge to defrost for the next day.
The benefits??
Silky soft fur, clean teeth (both of these are actual comments from vet examinations of Kato), non-stinky poo, less poo (there's less rubbish!), less cost for quality, and a happy contented cat....he is especially proud after chomping through some bones!
